Meal Prep: Labor Day

Lunches are served! This week our goal is to keep the carbs a tad lower after a week of vacationing and Labor Day, so we’re alternating between Reverse Turkey Roll-Ups and a Grilled Chicken Club Sandwich. I’m sure all of you had a busy weekend, so this is an easy way to jump back into the groove of things and stay on track with your LiveWELLMomz goals!

Reverse Turkey Roll-Up: we used Wegmans Natural Just Turkey Breast. If you’ve used it before, then you know if falls apart easily. There are no additives. Because of this, we put the turkey inside of the lettuce! We’ve got turkey, red bell pepper hummus, fresh mozzarella, spinach and sun-dried tomatoes inside. You will have to strategically place toothpicks in these wraps to hold them together. I used a lot of extra lettuce so I needed about 2-3 in each. Keep them in your refrigerator crisper drawer.

Grilled Chicken Club Sandwich: grilled chicken breast on Wegmans 27 grain and seeded bread. Add lettuce, tomato, fresh mozzarella, and avocado. We also added a slice of turkey bacon on Brian’s. Mmm!
